Ingredients

  • 3 c. dry red beans
  • 1 c. diced sweet onions
  • 3 Tbsp. vegetable oil
  • 1/2 c. diced carrots
  • 1 Tbsp. chopped fresh thyme
  • 2 x bay leaves
  • 18 lrg dry figs quartered
  • 1/2 c. sun-dry cherries
  • 1 Tbsp. kosher (coarse) salt
  • 1 tsp coarsely grnd black pepper

Directions

  1. Wash beans under cool running water, then let them soak for 1 hour in sufficient water to cover them completely. Drain. Saute/fry onions in oil for 15 min. Add in liquid removed beans, carrots, thyme, and bay leaves, along with sufficient water to cover the beans by 3 inches. Bring to a boil over low heat, then simmer for 1 hour. Add in figs and cherries. Simmer 45 min longer. Season with salt and pepper. Remove bay leaves.
