Ingredients

  • For candied almonds:
  • 1 cup chopped Marcona almonds
  • 1 tablespoon plus 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • For the roasted grape and vanilla gastrique:
  • 2 cups seedless red table grapes
  • 1 1/4 cups sugar
  • 1 1/4 cups hot water
  • 1/2 vanilla bean, split lengthwise and seeds scraped
  • 4 teaspoons apple cider vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • For the cheesecake souffle:
  • 1/4 cup cake flour
  • 2 tablespoons cornstarch
  • 1/8 teaspoon kosher salt
  • 1/2 pound cream cheese
  • 5 large eggs, separated
  • 1/3 cup whole milk
  • 1/4 cup unsalted butter, melted and cooled slightly
  • Finely grated zest of 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup sugar
  • 1/4 teaspoon cream of tartar
