All In One White Sauce

Ingredients

  • 425 ml lowfat milk this can be infused qv bechamel sauce) but must be cool
  • 20 gm plain flour
  • 40 gm butter
  • 1 x salt and freshly milled black pepper

Directions

  1. Put the lowfat milk in a saucepan then simply add in the flour and butter and bring everything gradually up to simmering point whisking continuously with a balloon whisk till the sauce has thickened and becomes smooth and glossy.
  2. Turn the heat down to its lowest possible setting and let the sauce cook very gently for 5 min stirring from time to time. Meanwhile taste and add in seasoning.
  3. The golden brown rule here as explained earlier is to use cool lowfat milk. So ifyou want to infuse the lowfat milk pour it into a bowl and let it get completely cool before you begin.
  4. Makes about 425ml
