Ingredients
- 1/2 cup unsweetened Dutch-process cocoa powder
- 2 tablespoons boiling water
- 2 oz. unsweetened chocolate, chopped
- 3/4 cup milk
- 1 cup unsalted butter, softened slightly
- 2 cups sugar
- 4 large eggs, separated
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- Filling:
- 1 tablespoons plus 1 3/4 teaspoons unsweetened Dutch-process cocoa powder
- 2 cups boiling water
- 3/4 cup plus 1 tablespoon plus 1/2 teaspoon sugar
- 1 oz. bittersweet chocolate, chopped
- 4 tablespoons cornstarch dissolved in 2 tablespoons cold water
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2 tablespoons unsalted butter
- Frosting:
- 12 oz. semisweet chocolate, chopped
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 1/2 cup hot water
- 1 tablespoon light corn syrup
- 1 tablespoon vanilla

%20sitting%20in%20my%20hotel%20room%20watching%20daytime%20TV%20or%20(b)%20had%20I%20ventured%20out%20someone%20would%20have%20found%20me%20on%20the%20sidewalk,%20covered%20in%20snot%20from%20my%20terrified%20wimperings%20with%20burned%20hind-quarters%20from%20sitting%20on%20the%20scorched%20pavement...so%20yes,%20I'm%20a%20loser%20and%20a%20baby%20and%20my%20sister,%20who%20is%20afraid%20of%20NOTHING,%20will%20never%20let%20me%20forget%20it.%3C/p%3E%3Cp%3ELoser%20and%20baby%20aside,%20I%20do%20love%20New%20York...and%20would%20love%20to%20go%20again...just%20not%20when%20it's%20100%20degrees%20and%20not%20when%20I%20have%20to%20be%20alone.%20%20I%20love%20it%20so%20much%20that%20I'm%20going%20to%20share%20with%20you%20my%20newest/favorite%20cookbook,%20New%20York%20Cookbook%20by%20Molly%20O'Neill.%20%20It's%20filled%20with%20stories%20and%20history%20about%20this%20great%20city%20and%20recipes,%20too!%20%20My%20mom%20told%20me%20about%20it,%20she%20has%20a%20copy%20that%20someone%20gave%20her%20and%20she%20thoroughly%20enjoyed%20reading%20it.%20%20I%20got%20on%20Amazon.com%20and%20picked%20up%20a%20used%20copy%20(it%20was%20published%20in%201992,%20I'm%20always%20the%20LAST%20to%20know!)%20for%20just%20a%20few%20bucks%20-%20and%20it%20was%20worth%20every%20penny%20and%20then%20some!%3C/p%3E%3Cp%3EMolly%20O'Neill%20was%20the%20food%20columnist%20for%20The%20New%20York%20Times%20Magazine%20and%20she%20spent%20five%20years%20compiling%20the%20stories%20and%20recipes%20in%20this%20book%20(she's%20also%20written%20several%20other%20recipe%20books)%20interviewing%20hundreds%20of%20New%20Yorkers%20who%20live/work/eat%20in%20the%20city%20and%20collecting%20their%20recipes.%20%20When%20I%20read%20the%20recipe%20for%20All%20Chocolate%20Blackout%20Cake,%20which%20is%20supposed%20to%20be%20the%20top-secret/coveted%20recipe%20from%20Ebinger's,%20a%20long-ago%20famous%20bakery%20in%20the%20city,%20I%20just%20had%20to%20make%20the%20cake%20for%20the%20boy's%20birthday.%20%20But...it%20didn't%20turn%20out%20so%20great!!%20%20I%20baked%20it%20for%20the%20time%20the%20recipe%20said...only%20my%20cake%20burned...so%20I%20trimmed%20away%20the%20edges,%20hoping%20to%20salvage%20the%20cake...the%20boy%20will%20eat%20anything%20made%20of%20chocolate,%20even%20burned%20chocolate.%3C/p%3E%3Cp%3EOver-baked,%20dry,%20with%20the%20hint%20of%20burnt%20cocoa,%20it%20was%20still%20a%20darn%20fine%20cake.%20%20And%20I%20would%20make%20it%20again%20but%20next%20time%20I'll%20watch%20the%20baking%20time,%20could%20be%20the%20recipe%20had%20it%20wrong%20or%20could%20be%20my%20oven%20is%20acting%20up%20again!%3C/p%3E%3Cp%3EAll%20Chocolate%20Blackout%20Cake%20-%20Adapted%20from%20New%20York%20Cookbook%20by%20Molly%20O'Neill%3C/p%3E%3Cp%3ECake:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20%20Butter%20and%20lightly%20flour%20two%208-inch%20round%20cake%20pans.%3C/p%3E%3Cp%3EMake%20the%20cake:%20%20Place%20the%20cocoa%20in%20a%20small%20bowl%20and%20whisk%20in%20the%20boiling%20water%20to%20form%20a%20paste.%20%20Combine%20the%20chocolate%20and%20milk%20in%20a%20small%20saucepan%20over%20medium%20heat.%20%20Stir%20frequently%20until%20the%20chocolate%20melts,%20about%202%20minutes.%20%20Remove%20from%20the%20heat.%20%20Whisk%20a%20small%20amount%20of%20the%20hot%20chocolate%20milk%20into%20the%20cocoa%20paste%20to%20warm%20it.%20%20Whisk%20the%20cocoa%20mixture%20into%20the%20milk%20mixture.%20%20Return%20the%20pan%20to%20medium%20heat%20and%20stir%20for%201%20minute.%20%20Remove%20and%20set%20aside%20to%20cool%20until%20tepid.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20mixer,%20cream%20the%20butter%20and%20sugar%20together.%20%20Beat%20in%20the%20egg%20yolks,%20one%20at%20a%20time,%20and%20add%20the%20vanilla.%20%20%20Slowly%20stir%20in%20the%20chocolate%20mixture.%20%20Combine%20the%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt%20in%20a%20small%20bowl.%20%20Using%20a%20spatula%20or%20a%20wooden%20spoon,%20slowly%20add%20the%20flour%20mixture%20to%20the%20chocolate%20mixture.%20%20Fold%20in%20until%20just%20mixed.%20%20In%20another%20bowl,%20whisk%20the%20egg%20whites%20until%20soft%20peaks%20form.%20%20Using%20a%20rubber%20spatula,%20gently%20fold%20the%20egg%20whites%20into%20the%20batter.%20%20Divide%20the%20batter%20between%20the%20prepared%20pans.%20%20Bake%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20clean,%20about%2045%20minutes%20(I'd%20check%20after%2035%20minutes%20just%20to%20be%20safe!)%20%20Cool%20the%20cakes%20in%20the%20pans%20and%20on%20a%20rack%20for%2015%20minutes.%20%20Gently%20remove%20the%20cakes%20from%20the%20pans%20and%20continue%20to%20cool.%3C/p%3E%3Cp%3EWhile%20the%20cake%20is%20baking,%20make%20the%20filling:%20%20Combine%20the%20cocoa%20and%20boiling%20water%20in%20a%20small%20saucepan%20over%20low%20heat.%20%20Stir%20in%20the%20sugar%20and%20chocolate.%20%20Add%20the%20dissolved%20cornstarch%20paste%20and%20salt%20to%20the%20pan%20and%20bring%20to%20a%20boil,%20stirring%20constantly.%20%20Boil%20for%201%20minute.%20Remove%20the%20pan%20from%20the%20heat%20and%20whisk%20in%20the%20vanilla%20and%20butter.%20%20Transfer%20the%20mixture%20to%20a%20bowl,%20cover,%20and%20refrigerate%20until%20cool.%3C/p%3E%3Cp%3EMake%20the%20frosting:%20%20Melt%20the%20chocolate%20in%20a%20double%20boiler%20over%20hot,%20not%20simmering,%20water,%20stirring%20until%20smooth.%20Remove%20the%20top%20of%20the%20double%20boiler%20from%20the%20heat%20and%20whisk%20in%20the%20butter,%201%20tablespoon%20at%20a%20time.%20%20Return%20the%20top%20to%20the%20heat,%20if%20necessary%20to%20melt%20the%20butter.%20%20Whisk%20in%20the%20hot%20water%20all%20at%20once%20and%20whisk%20until%20smooth.%20%20Whisk%20in%20the%20corn%20syrup%20and%20vanilla.%20%20Cover%20and%20refrigerate%20for%20up%20to%2015%20minutes%20prior%20to%20using.%3C/p%3E%3Cp%3EAssemble%20the%20cake:%20%20Use%20a%20sharp%20serrated%20knife%20to%20slice%20each%20cake%20layer%20horizontally%20in%20half%20to%20form%204%20layers%20(I%20skipped%20this%20part%20and%20just%20had%20a%202%20layer%20cake.)%20%20Set%201%20layer%20aside.%20%20Place%201%20layer%20on%20a%20cake%20round%20or%20plate.%20%20Generously%20swath%20the%20layer%20with%20one-third%20of%20the%20filling.%20Add%20the%20second%20layer%20and%20repeat.%20%20Set%20the%20third%20layer%20on%20top.%20%20Quickly%20apply%20a%20layer%20of%20frosting%20to%20the%20top%20and%20side%20of%20the%20cake.%20%20Refrigerate%20for%2010%20minutes.%20%20Meanwhile,%20crumble%20the%20remaining%20cake%20layer.%20%20Apply%20the%20remaining%20frosting%20to%20the%20cake.%20%20Sprinkle%20it%20liberally%20with%20the%20cake%20crumbs.%20%20Serve%20the%20cake%20within%2024%20hours.%20%20Store%20in%20a%20cool%20place.%20%20Serves%208%20to%2010.%20%20(Since%20I%20did%20not%20cut%20my%20layers%20in%20half%20(they%20were%20already%20burned%20so%20why%20bother?!?)%20I%20did%20not%20crumble%20the%204th%20layer%20and%20put%20on%20top%20of%20the%20cake...but%20even%20though%20it%20sounds%20weird,%20it's%20one%20of%20the%20things%20that%20made%20this%20cake%20an%20%22Ebinger%22%20favorite!)%3C/p%3E%3Cp%3EYou%20can%20see%20how%20dark%20and%20rich%20this%20cake%20it!%20%20And%20notice%20how%20frosting%20covers%20the%20mistakes...by%20the%20way,%20the%20frosting%20was%20A-Mazing%20and%20would%20be%20great%20on%20other%20cakes,%20too!%3C/p%3E){kind=link}
