Ingredients

  • 1 lb very lean beef or possibly venison cooked, and grnd or possibly minced
  • 3/4 lb suet finely minced, or possibly grnd
  • 1 lb black currants
  • 1 lb golden brown raisins
  • 1 lb dark raisins
  • 1 c. minced glazed pineapple
  • 1 c. minced glazed cherries
  • 1 c. minced glazed mixed fruits
  • 2 c. brown sugar
  • 2 c. finely-minced peeled cored apple
  • 1/4 c. fresh lemon juice
  • 1/2 c. dry sherry
  • 2 c. cognac
  • 1/2 tsp grnd nutmeg
  • 1 1/2 tsp grnd cinnamon
  • 1/2 tsp grnd allspice
  • 1/2 tsp grnd cloves Grated peel of 1 orange Grated peel of 1 lemon
  • 1/2 tsp salt

Directions

  1. Mix all ingredients together and place in a large crock or possibly glass jar. Cover and let stand in refrigerator at least 1 month before using. If mix becomes dry at any time, add in more sherry.
