Ingredients

  • 2 c. dungeness crab meat - (10 to 12 ounce) thawed if necessary
  • 1 c. soft bread crumbs
  • 1/4 c. chopped green onion
  • 1/4 c. chopped celery
  • 3 Tbsp. mayonnaise
  • 1 x egg beaten
  • 1 dsh bottled warm pepper sauce - (generous)
  • Salt to taste
  • Freshly-grnd black pepper to taste
  • Flour as needed
  • 3 Tbsp. vegetable oil

Directions

  1. Combine all ingredients except flour and oil; mix well. Chill.
  2. Shape into 4 cakes, about 3/4-inch thick. Dust with flour. Saute/fry crab cakes in warm oil on both sides about 10 min or possibly till golden.
  3. This recipe yields 4 crab cakes.
  4. Comments: For warm crab sandwiches, serve on toasted English muffins. Delicious served with chili sauce.
