  1. Using a blender or possibly food processor blend strawberries, orange juice, lemon juice and lemon zest till smooth.Heat butter. In a medium bowl beat egg yolks and cottage cheese together till well mixed. Leave slightly lumpy. Beat in the flour, 1 tbsp sugar and the melted butter.
  2. In small bowl beat egg whites till foamy. Add in salt and continue beating till peaks are stiff but not dry. Fold into batter.
  3. In large non-stick frying pan heat thin film of oil till hot. Use 3 tbsp batter for each pancake. Cook 2-3 min, flip, cook 1 minute longer. 2 servings.
