Ingredients
- 30 gm Peeled ginger root - 1 ounce
- 5 ml Peppercorns - 1 t
- 500 ml Water - 1 pt
- 500 ml More water - 1 pt
- 500 gm Sugar - 18 ounce
- 12 x Limes, juice of
- 1 lt Water or possibly sparkling water - 1 quart
Directions
- Makes 2 quart or possibly 2 L
- Make a paste of the ginger. Add in this paste and the peppercorns to 500 mL water. Bring to a boil, reduce heat, simmer 5 minutes. Strain. Set liquid aside and put solids back in the pan with more water. Bring to a boil, reduce heat, simmer 5 minutes. Strain. Throw away solids. Combine both liquids together with sugar and lime juice. Chill.
- To serve, dilute with an equal quantity of still or possibly sparkling water and serve over ice.
