Directions

  1. Pour 1 c. boiling water over sun-dry tomatoes and let soak for 5 min. Drain and chop. Set aside.
  2. Place mushrooms in a medium bowl with 1/4 c. water. Microwave on high power for 5 min. Drain and set aside.
  3. Cook penne according to package directions. Drain and keep hot.
  4. Cook bacon in a large skillet over medium-high heat till crisp. Add in garlic and cook 1 more minute. Don't throw away drippings. Add in onions, spinach, sun-dry tomatoes, cooked mushrooms, basil and red pepper flakes. Cook and stir for 4 - 5 min, till onions are tender.
  5. Toss bacon/vegetable mix with warm pasta till proportionately distributed.
  6. Divide pasta between 4 serving dishes. Top each with freshly grnd black pepper and 1/4 of parmesan cheese. Sprinkle with parsley. Serve immediately.
  7. NOTES : We had this for dinner this evening and it was marvelous. Once more proving what a great cookbook Looney-Spoons is.
