- 1 pound stew beef
- kosher salt, maybe a tsp?
- a couple spoonfuls of canola oil
- 2 Tbsp butter
- 1 onion
- 1 tsp smoked Spanish paprika and 2 tsp regular paprika
- 2 cups chicken stock
- 1 red bell pepper, diced
- 2 cloves garlic
- 3 small yellow potatoes, peeled and diced
- about 1/2 cup tomato puree
- 1/2 tsp caraway seed
- around a cup of dried egg noodles
- sour cream

%20for%20years,%20but%20for%20some%20reason%20this%20week%20I%20decided%20to%20try%20a%20recipe%20for%20%E2%80%9Cgoulash%20soup%E2%80%9D%20from%20Barbara%20Kafka%E2%80%99s%20soup%20cookbook,%20which%20turned%20out%20to%20be%20vaguely%20similar%20%E2%80%93%20it%20has%20paprika%20and%20onions%20as%20the%20flavor%20base%20%E2%80%93%20but%20is%20very%20much%20its%20own%20thing.%20%20I%20didn%E2%80%99t%20follow%20the%20recipe%20slavishly,%20but%20I%20more%20or%20less%20kept%20to%20the%20ingredient%20list,%20and%20it%20was%20incredible.%20It%20didn%E2%80%99t%20hurt%20that%20the%20stew%20beef%20I%20used%20was%20from%20our%20latest%20quarter-cow%20from%20Skagit%20Angus,%20tender%20and%20really%20beefy-flavored.%3C/p%3E%3Cp%3EThe%20original%20recipe%20called%20for%20coating%20the%20beef%20in%20flour%20before%20frying%20it,%20which%20I%20didn%E2%80%99t%20feel%20like%20doing.%20I%20thought%20about%20making%20a%20roux%20separately%20to%20thicken%20the%20soup,%20but%20it%20turned%20out%20not%20to%20be%20necessary%20%20%E2%80%93%20the%20texture%20of%20the%20broth%20was%20thick%20and%20silky.%3C/p%3E%3Cp%3EHungarian%20Goulash%20Soup%3C/p%3E%3Cp%3Eadapted%20from%20Soup:%20A%20Way%20of%20Life%20by%20Barbara%20Kafka%3C/p%3E%3Cp%3EI%20salted%20the%20beef,%20then%20seared%20it%20in%20a%20soup%20pot%20in%20two%20batches%20with%20canola%20oil%20at%20high%20heat,%20then%20set%20it%20aside.%3C/p%3E%3Cp%3EIn%20the%20same%20pan,%20I%20added%20the%20butter,%20turned%20the%20heat%20to%20medium%20and%20sauteed%20the%20onion.%20Once%20it%20softened%20I%20added%20the%20paprika,%20then%20put%20the%20meat%20back%20in,%20mixed%20it%20all%20up,%20and%20added%20the%20stock.%20I%20brought%20it%20to%20a%20simmer,%20covered%20the%20pot,%20turned%20the%20heat%20to%20low%20and%20let%20it%20cook%20for%20an%20hour.%3C/p%3E%3Cp%3EAt%20this%20point%20I%20added%20the%20potato,%20garlic%20and%20bell%20pepper,%20recovered%20the%20pan%20and%20cooked%20for%20another%20fifteen%20minutes%20or%20so.%20Then%20I%20uncovered,%20added%20the%20caraway%20seeds%20and%20tomato%20plus%20some%20water%20to%20rinse%20out%20the%20can,%20brought%20the%20soup%20back%20to%20a%20simmer,%20and%20added%20the%20pasta.%20Once%20the%20noodles%20were%20done,%20I%20checked%20for%20seasoning,%20added%20a%20little%20salt,%20and%20served%20with%20sour%20cream.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
