Ingredients

  • 14 tbsp unsalted butter, room temperature
  • 1 cup caster sugar/superfine sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp mixed essence
  • 1/4 tsp orange zest (optional)
  • 1/4 tsp lemon zest (optional)
  • 1 cup cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • If you would like to weigh your ingredients instead:
  • 200g unsalted butter, room temperature
  • 200g white granulated sugar, if using superfine sugar, then 225g
  • 200g eggs, room temperature
  • 0.18oz vanilla
  • 0.18oz mixed essence
  • 100g cake flour
  • 7.50g baking powder
