A Daring Baker's Challenge- Maple Mousse Served in an Edible Bacon container Recipe

Ingredients
- First I made the Bacon Cups:
- 1 cup (240 ml/ 8 fluid oz.) pure maple syrup (not maple-flavoured syrup)
- 4 large egg yolks
- 1 package (7g/1 tbsp.) unflavoured gelatine
- 1 1/2 cups (360 ml. g/12 fluid oz) whipping cream (35% fat content)

%20where%20my%20first%20words%20probably%20were%20Maple%20Syrup,%20I%20absolutely%20took%20for%20granted%20that%20everyone%20knew%20what%20it%20was%20and%20just%20had%20it%20in%20their%20pantries.%20%20So%20it%20was%20very%20surprising%20watching%20the%20entries%20from%20the%20Daring%20Bakers%20around%20the%20world%20who%20had%20not%20heard%20of%20it%20and%20were%20unable%20to%20find%20it%20in%20their%20grocery%20stores...the%20Phillipines%20is%20a%20good%20example.%20%20They%20were%20looking%20for%20recipes%20for%20maple%20syrup%20and%20substitutes.%20%20And%20of%20course%20the%20Daring%20Bakers%20responded%20with%20suggestions...After%20reading%20these%20entries,%20I%20ran%20to%20my%20pantry%20and%20hugged%20my%20tin%20of%20maple%20syrup!%3C/p%3E%3Cp%3EHere%20is%20a%20little%20video%20on%20Maple%20Syrup%20in%20Quebec.%3C/p%3E%3Cp%3EJust%20to%20let%20you%20know,%20in%20all%20my%20years%20living%20in%20Quebec,%20I%20never%20tasted%20this%20combination!%3C/p%3E%3Cp%3EOn%20with%20the%20recipe...%3C/p%3E%3Cp%3EFirst%20I%20made%20the%20Bacon%20Cups:%3C/p%3E%3Cp%3EIngredients:%20%2024%20thin%20slices%20good%20quality%20bacon%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Pre-heat%20the%20oven%20to%20400%20degrees%20F/200%20degrees%20C.%3C/p%3E%3Cp%3E2.%20Take%20a%20muffin%20pan%20or%206%20small%20%C2%BD%20cup%20capacity%20heat-proof%20bowls,%20turn%20upside%20down%20and%20carefully%20form%20aluminum%20foil%20covers%20on%20the%20back%20of%206%20muffin%20cups%20or%20the%20bowls.%3C/p%3E%3Cp%3E3.%20Taking%202%20strips%20of%20bacon%20at%20a%20time%20crisscross%20the%20strips%20over%20the%20backs%20of%20the%20muffin%20cups%20and%20cut%20to%20size%20a%20tad%20longer%20then%20the%20bottom%20part%20of%20the%20cup.%20Now%20use%201%20to%202%20more%20strips%20to%20cover%20the%20sides%20of%20the%20muffin%20cups%20in%20a%20weaving%20fashion.%20You%20want%20a%20full%20tight%20weave%20because%20bacon%20shrinks%20a%20lot.%20For%20smaller%20cups%20I%20used%20a%20shot%20glass%20with%20a%20square%20of%20bacon%20for%20the%20bottom%20and%20I%20wrapped%201%20strip%20around%20the%20side.%3C/p%3E%3Cp%3E4.%20Tuck%20the%20ends%20of%20the%20bacon%20strips%20inside%20otherwise%20they%20will%20curl%20while%20cooking.%20A%20good%20idea%20is%20to%20insert%204%20toothpicks%20where%20the%20crisscrossed%20bacon%20meets%20in%20the%20weave.%3C/p%3E%3Cp%3E5.%20Place%20muffin%20pan%20in%20a%20cookie%20tray%20to%20catch%20drippings.%20Bake%20in%20oven%20for%20about%2025%20to%2040%20minutes,%20or%20until%20the%20bacon%20is%20golden%20and%20crisp%20but%20not%20burned.%3C/p%3E%3Cp%3E6.%20Cool%20completely,%20a%20good%20hour,%20before%20removing%20your%20cups%20delicately%20from%20the%20foil.%3C/p%3E%3Cp%3EThen%20the%20maple%20mouse%3C/p%3E%3Cp%3EMaple%20Mousse:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Bring%20maple%20syrup%20to%20a%20boil%20then%20remove%20from%20heat.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20bowl,%20whisk%20egg%20yolks%20and%20pour%20a%20little%20bit%20of%20the%20maple%20syrup%20in%20while%20whisking%20(this%20is%20to%20temper%20your%20egg%20yolks%20so%20they%20don%E2%80%99t%20curdle).%3C/p%3E%3Cp%3E3.%20Add%20warmed%20egg%20yolks%20to%20hot%20maple%20syrup%20until%20well%20mixed.%3C/p%3E%3Cp%3E4.%20Measure%201/4%20cup%20of%20whipping%20cream%20in%20a%20bowl%20and%20sprinkle%20it%20with%20the%20gelatine.%20Let%20it%20rest%20for%205%20minutes.%20Place%20the%20bowl%20in%20a%20microwave%20for%2045%20seconds%20(microwave%20for%2010%20seconds%20at%20a%20time%20and%20check%20it%20in%20between)%20or%20place%20the%20bowl%20in%20a%20pan%20of%20barely%20simmering%20water,%20stir%20to%20ensure%20the%20gelatine%20has%20completely%20dissolved.%3C/p%3E%3Cp%3E5.%20Whisk%20the%20gelatine/whipping%20cream%20mixture%20into%20the%20maple%20syrup%20mixture%20and%20set%20aside.%3C/p%3E%3Cp%3E6.%20Whisk%20occasionally%20for%20approximately%20an%20hour%20or%20until%20the%20mixture%20has%20the%20consistency%20of%20an%20unbeaten%20raw%20egg%20white.%3C/p%3E%3Cp%3E7.%20Whip%20the%20remaining%20cream.%20Stir%201/4%20of%20the%20whipped%20cream%20into%20the%20maple%20syrup%20mixture.%20Fold%20in%20the%20remaining%20cream%20and%20refrigerate%20for%20at%20least%20an%20hour.%3C/p%3E%3Cp%3E8.%20Remove%20from%20the%20fridge%20and%20divide%20equally%20among%20your%20edible%20containers.%3C/p%3E%3Cp%3EBy%20the%20way%20Maple%20syrup%20will%20keep,%20unopened,%20in%20a%20cool%20dark%20place%20indefinitely.%20Once%20opened,%20maple%20syrup%20must%20be%20refrigerated.%20If%20mould%20appears,%20discard%20the%20syrup%20immediately.%3C/p%3E%3Cp%3EAnd%20now%20the%20taste%20test%20with%20Camera%20Guy...he%20is%20nowhere%20to%20be%20found...%20he%20is%20hiding%20in%20Montreal...maybe%20he%20is%20avoiding%20this%20taste%20test.%3C/p%3E%3Cp%3ESo%20I%20guess%20it%20is%20only%20me!%20%20Actually%20the%20maple%20mousse%20is%20deeeelicious.%20%20I%20am%20not%20too%20sure%20about%20the%20combination,%20more%20because%20of%20the%20textures%20-%20not%20the%20taste.%20Maybe%20the%20bacon%20should%20have%20been%20crispier!!!%20%20%20After%20all,%20I%20love%20bacon%20with%20maple%20syrup%20drizzled%20on%20it.%20%20This%20just%20looks%20a%20little%20strange....%3C/p%3E%3Cp%3EI'm%20happy%20I%20made%20it-%20but%20sorry%20to%20say....I%20won't%20be%20repeating%20the%20performance.%20%20Thank%20you%20Evelyne%20for%20being%20so%20creative.%3C/p%3E%3Cp%3EUntil%20we%20bake%20again...%3C/p%3E%3Cp%3EPenny%3C/p%3E){kind=link}
