Ingredients

  • 1 box yellow cake mix
  • 1 box instant pudding, vanilla or possibly pineapple
  • 4 x Large eggs
  • 3/4 c. Oil
  • 1 can (10 ounce) or possibly 1 1/4 c. 7-Up
  • 2 x Large eggs
  • 11/2 c. Sugar
  • 1 Tbsp. Flour
  • 1 stk melted margarine
  • 1 c. Crushed pineapple including juice
  • 11/4 c. Coconut

Directions

  1. Beat first four ingredients till light and fluffy. Add in 7-Up and beat well. Pour into greased and floured 9"x13" pan. Bake 40 min at 350 degrees. While cake is baking, make Pineapple icing: Blend first five ingredients and cook till thick, then add in coconut. Frost cake while it is still hot.

    You have a recipe for 7up cake that calls for pineapple cream instant pudding. Can you tell me where I can purchase that product? I have a recipe from my mother that calls for pineapple instant pudding and it just isn't the same without it.
