  • 2 (Approx 1/2 pound) Boneless, Skinless Chicken Breasts, cut into a 1/2-inch dice
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon dried Oregano
  • 1 link (Approx 4 ounces) Chorizo, cut into 1/4-inch slices
  • 1 Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 3 cloves Garlic, smashed
  • 1-1/2 cups Arborio Rice
  • 3 cups Chicken Stock
  • 1 can (15.5 ounces) Fire Roasted Tomatoes, drained
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 generous pinch Saffron Threads
  • 1 cup frozen Peas
  • 1 Lemon, juiced
  • Salt and Pepper to taste
