20 minute pulled pork.

This is a recipe I just came up with. I used the Pampered Chef Deep Covered Baker (Thanks Kayla) but I'm sure you could use any covered microwaveable dish.

Ingredients

  • 5 Pork chops or sliced pork loin roast. The pork should be boneless and about 1/2" thick. 1/4 cup of water. Your favorite pork and/or chicken rub. I used Durkee St. Louis style chicken and rib rub. Sweet BBQ sauce, I used Sweet Baby Rays.

Directions

  1. Lay pork in bottom of pan and sprinkle with rub. Add the water and cover. Microwave on high for 9 minutes. Remove from microwave and drain into a bowl. Using two forks shred the pork holding a pork chop with one fork and pulling it away in about 1/4 inch or less increments with the other. You will find that the pork shreds in some directions better than others. Check to make sure that the pork is shredded fine enough for your liking and shred more if needed. Add about1/2 of the pork drippings and mix. You should have very little liquid in the bottom of the pan but the pork should be very juicy at this point. Add BBQ sauce and let sit for a few minutes. Serve on bread, buns or rolls.
