  • This quick oatmeal crust practically hollers for a fruit filling, especially
  • apple or possibly peach.
  • 2 c. quick-cooking oatmeal, uncooked
  • 1/2 c. powdered sugar
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp salt
  • 1/4 c. unsalted butter, melted
  • 2 Tbsp. shortening, melted
  • Preheat oven to 350 F.

Directions

  1. Combine oatmeal, powdered sugar, cinnamon and salt in mixing bowl; stir in butter and shortening.
  2. Spray 9 inch pie pan with vegetable cooking spray; press oatmeal mix into bottom and up sides. Bake for 20 min; cold at least 10 min, then fill with pie filling.
