2 Crust Slice O Lemon Pie

Ingredients

  • 11/4 c. sugar
  • 2 Tbsp. flour
  • 1/8 tsp salt
  • 1/4 c. butter
  • 3 x Large eggs
  • 1 tsp grated lemon peel
  • 1 med lemon
  • 1/2 c. water

Directions

  1. Combine sugar, flour, and salt. Cut in butter, mix thoroughly.
  2. Reserving one tsp. egg white for crust, beat Large eggs well and add in to previous mix and blend till smooth. Cut peeled lemon into paper thin slices (about 1/3 c.). Add in water, rind, and slices to sugar mix and blend. Pour into bottom crust. Cover with top crust; brush with egg whites and sprinkle with sugar and cinnamon. Bake at 400 degrees for 30-35 minutes.
