Ingredients

  • 3/4 c. butter
  • 1/2 c. celery, diced 1/8th"
  • 1/2 c. flour
  • 21/2 pt chicken stock
  • 2 Tbsp. Parmesan-Romano cheese
  • 1/4 tsp Accent [MSG] -- optional
  • 1/2 c. carrots, diced 1/8th"
  • 1/2 c. onion, diced 1/8th"
  • 1/2 tsp dry mustard
  • 6 ounce Cheddar cheese -- grated
  • 1 x 11-ounce. bottle beer
  • Salt & pepper -- to taste

Directions

  1. Saute/fry vegetables till done BUT NOT browned . blend in flour, dry mustard, and chicken stock; cook 5 min . blend in cheddar cheese, Parmesan-Romano cheese, and beer . let simmer for 30 min . season with salt and pepper . serve with French Bread and tossed salad.
