Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 4 x boneless skinless fish fillets - (abt 6 ounce ea)
  • (such as snapper, grouper or possibly sea bass)
  • 1 c. spicy green salsa
  • 1 c. shredded Monterey jack cheese - (4 ounce)
  • 1/2 c. chili flavored Pumpkorn
  • (or possibly toasted pumpkin seeds)

Directions

  1. Heat oven to 400 degrees. Spread extra virgin olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish.
  2. Bake fish 8 min. Spread cheese proportionately over top. Bake 2 to 3 min more, till cheese is bubbly. Sprinkle with Pumpkorn before serving.
  3. This recipe yields 4 servings.
