I love this vegetable and the many ways to enjoy it. I have several recipes that I will be adding shortly. Post yours here.
Did you know? The leaves contain poisonous substances, including oxalic acid which is a nephrotoxic. Also, in traditional Chinese medicine, rhubarb roots have been used as a laxative. We typically use it in pies combined with sugar, cinnamon, nutmeg and ginger. Sometimes we will add orange, lemon, and lime juices.
