About me
I am a qualified baker, pastry cook, decorator and patissier. I trained in England at the Birmingham College of Food where I also taught for 10 years.
I worked at the Dorchester Hotel in London and the Cumberland Hotel where I was seconded from my hotel in Birmingham to help with the royal Garden Parties at Buckingham Palace. I spent a year at the Bellevue Palace Hotel in Berne Switzerland leaving as first commis patissier. I specialise in cake decoration and marzipan modelling although I teach all bakery related subjects and have completed 2 sugar courses with Ewald Notter when he was in Zurich and have also completed 2 chocolate courses with Callebaut choloates school here in Australia. I have been writing for the Australian baking journal- The Leading Edge and have written a baking encyclopedia as well as a number of other shorter books relaing to practical subjects. Currently I am looking for a publisher or literary agent to get my books published.
My present position is as senior teacher (Advanced Skills Teacher) at Tasmania's state baking school where I also write learning and assessment tools.
