walnuts, raisins and cinnamon really make this dish great.
Ingredients
- 1 lb. zucchini, peeled and grated.
- 1 Tbls. sugar
- 1/8 Teas. salt
- 1/2 - 1 teas. cinnamon
- 1/2 cup raisins
- 1/4 cup chopped walnuts
- 1 tbls. oil or butter
- 4 eggs, lightly beaten
Directions
- After grating zucchini, let it rest for 10 min. and drain off liquid.
- Add remaining ingredients to the lightly beaten eggs and mix well.
- Add this to zucchini and mix lightly. Place in a lightly greased 8" square pan and bake in preheated 400 degree oven for 25 minutes or until lightly browned.
