Directions

  1. Preheat oven to 475 degrees. Coat a large baking sheet with cooking spray.
  2. Combine flours, cornmeal, salt and pepper.
  3. Dip zucchini in egg whites, coat with flour mixture. Place zucchini on baking sheet, coat all exposed sides with cooking spray.
  4. Bake on centre rack for 7 minutes,
  5. Turn zucchini and coat any floury spots with cooking spray. Continue to bake until golden and just tender, about 5 minutes more. Serve hot.

    I made these for a few friends and used a curry salad dressing as a dip. Everyone liked them and my children could not stop eating them. I actually had to ask them to save some for my guests.

      Kristen, these are really great. The recipe is super simple and easy to prepare, and there's zero grease; not a lot of sodium - This will definitely be a staple this summer for us.
