Ingredients

  • 2 c. flour
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking pwdr
  • 3 1/2 teaspoon cinnamon
  • 3 large eggs
  • 1 c. oil
  • 1 1/2 c. sugar
  • 2 c. grated zucchini
  • 2 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 1 c. raisins
  • 1 c. minced pecans or possibly sunflower seeds

Directions

  1. Oven at 350 degrees. 2 loaves. Put together large eggs, oil, sugar, zucchini, vanilla and lemon extract in bowl, beat thoroughly. Stir together dry ingredients and add in to egg mix, beat till smooth. Add in raisins and nuts.Pour into greased loaf pans (2) or possibly muffin tins. Bake 40 min if loaves or possibly 20 min if muffins done when center springs back.
  2. You may want to line bottom of pans with wax paper for easy removal.
