I love this recipe. This was one of my cousin Laura’s. She loved to bake when we were teenagers and bread was one of her favorite things to make. I had completely forgotten about this wonderful recipe until I was searching through my tin file for something to make for Sweet Taste of Saturday. Your family will love this sweet, dense treat. The sugar and cinnamon bake throughout the bread and make a slightly crunching sweet crust! Nothing better than a slice of this in the morning with a nice hot cup of tea or coffee. I hope you like it as much as my family does.

Directions

  1. Beat eggs, sugar and oil until creamy. Add flour, salt, soda, baking powder, cinnamon and ginger. Mix well. Stir the shredded zucchini in by hand. Spray 2 small bread pans (or you could use 1 large one, but you may have to bake it a little longer) with cooking spray. Divide the dough evenly between them. Bake at 350 for 1 hour.
