Ingredients

  • 3 c. thinly sliced, unpared zucchini
  • 1 c. Bisquick baking mix
  • 1/2 c. finely minced onion
  • 1/2 c. grated Parmesan cheese
  • 2 T minced parsley
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon oregano
  • Dash of pepper
  • 1/2 teaspoon garlic flakes
  • 1/2 c. vegetable oil
  • 4 large eggs, slightly beaten
  • 1/2 c. grated cheddar cheese

Directions

  1. Heat oven to 350 degrees. Grease oblong 13"x9"x2" pan. Bake till golden, about 35 min. Cut into 2"x1" bars. Makes 4 dozen appetizers. Also good in place of vegetable for meal.
