Yogurt-Marinated Chicken Kebabs with Tzatziki Recipe

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup plain yogurt
  • Juice from 1 lemon
  • ¾ teaspoon kosher salt, more to taste
  • ¼ teaspoon freshly ground black pepper, more to taste
  • 3 tablespoons olive oil, divided
  • 1 tablespoon minced fresh rosemary
  • 1 large red onion, cut into wedges
  • Flatbread or pitas, for serving
  • Special equipment: wooden skewers (soaked in water for at least twenty minutes)
  • For the tzatziki:
  • 1 cup plain yogurt
  • ¼ cup sour cream
  • ½ tablespoon white wine vinegar
  • ½ hothouse cucumber, seeded and grated
  • Juice from ½ a lemon
  • 1 tablespoon olive oil
  • ½ tablespoon minced garlic
  • 1 tablespoon finely chopped dill
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
