Yeast Rolls - Cinnamon Rolls

Ingredients

  • 1/3 c. sugar
  • 1/3 c. shortening
  • 1 teaspoon salt
  • 2 large eggs
  • 2 pkg. yeast
  • 7 c. flour
  • 1 c. well-mashed potatoes (no lumps, must be hot)
  • 2 c. lukewarm water
  • 1 c. sugar
  • 2 T butter
  • Cinnamon

Directions

  1. Mix yeast in warm water; let set. Mix sugar, shortening, salt and 1 1/2 cups warm water. Let cool, then add in 2 large eggs. Add in mashed potatoes to sugar mix and put together with yeast. Gradually add in flour.Gently mix thoroughly. Place in warm area; let rise double. Gently knead risen dough; remove amount needed for dinner rolls. Roll 3 small balls; place in muffin tins. Let rise, then bake at 350 degrees till golden.
  2. Add in 1 cup sugar plus desired cinnamon to remainder of dough and mix gently. Roll very thin. Place small amount of butter/cinnamon mix; roll dough into log cylinder and slice. Let rise to double and bake at 350 degrees till golden.
