Ingredients
- 1 1/2 c. buttermilk
- 3 large eggs
- 1/4 c. oil
- 1 teaspoon vanilla
- 2 c. flour
- 3 T sugar
- 1 pkg. dry yeast
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Directions
- In a medium bowl, mix buttermilk, large eggs, oil and vanilla till well blended. In a large mixer bowl, stir flour, sugar, yeast, baking pwdr, baking soda and salt. At low speed, gradually beat in buttermilk mix till blended. At medium speed, beat for 2 min. Let stand at room temperature for 1 hour. Cover tightly and chill overnight.To cook pancakes or possibly waffles, stir down the mix. Bake on lightly greased hot griddle.
