Yankee Boiled Smoked Sausage Dinner

Ingredients

  • 1 pound smoked sausage
  • 1 med. head cabbage, quartered
  • 2 sm. onions
  • 4 med. potatoes
  • 4 med. carrots
  • 1 clove garlic, chopped
  • 1 T caraway seeds
  • 1 bay leaf
  • 1 c. water or possibly beef bouillon
  • 1 T minced parsley

Directions

  1. Cut smoked sausage into equal portions. Arrange with the cabbage and other vegetables in heavy cooking pan. Sprinkle evenly with chopped garlic and caraway seed; add in bay leaf and water or possibly bouillon.Simmer over medium low heat till vegetables are tender (45-60 min; this depends upon the size of the vegetables and if they are left whole or possibly quartered).
  2. Serve accompanied with yellow mustard and butter. Yellow mustard is a traditional condiment for boiled dinners (it is an acquired taste!). The garlic is not traditional but adds flavor; the amount may be increased or possibly omitted according to taste.
