Ingredients
- 1 cup (2 sticks) plus 5 Tbsp unsalted butter, softened (additional to butter pan)
- 1 1/3 cups sugar
- 1 1/3 cups whole milk Ricotta
- 3 eggs
- 1/3 cup vin santo (or dry Sherry)
- 1 1/3 cups all purpose flour (plus additional for the pan)
- 2 tsp baking powder
- 2 Tbsp pine nuts, toasted
- 1 to 2 Tbsp confectioner's sugar

%20way%20of%20life.%3C/p%3E%3Cp%3ENot%20just%20a%20recipe%20book%20at%20all%20but%20a%20story%20of%20their%20love%20of%20Tuscany;%20the%20people%20and%20the%20landscape%20and%20the%20food.%20And%20don%E2%80%99t%20forget%20the%20wine%E2%80%A6oh%20the%20wine!%20Francis%20shared%20with%20us%20the%20love%20she%20has%20for%20the%20wines%20of%20the%20Tuscan%20region%20and%20I%E2%80%99m%20not%20talking%20about%20any%20%E2%80%98big%E2%80%99%20Tuscan%20wines%20but%20those%20grown%20and%20bottled%20locally%20and%20what%20the%20residents%20of%20the%20area%20bring%20out%20for%20dinner%20guests%20and%20friends.%20Simple%20and%20un-fussy,%20those%20are%20the%20characteristics%20they%20want%20to%20share%20with%20the%20world%20with%20their%20launching%20of%20Tuscan%20Sun%20wines.%20I%20enjoyed%20the%20entire%20line%20(why%20yes%20I%20did%20taste%20them%20all)%20but%20like%20many%20my%20favorite%20is%20Tondo%20Tondo.%20This%20gorgeous%20bottle%20holds%20the%20perfect%20elixir.%20Not%20too%20dry,%20certainly%20not%20too%20sweet,%20light%20on%20the%20tannins%20but%20still%20bold%20with%20fruit.%20I%20often%20designate%20a%20certain%20wine%20as%20my%20house%20wine%20and%20this%20is%20now%20it%E2%80%A6and%20that%20means%20it%E2%80%99s%20also%20VERY%20affordable;%20as%20in%20the%20$10%20bottle%20range.%3C/p%3E%3Cp%3EWhile%20I%20certainly%20have%20enjoyed%20some%20of%20the%20Tondo%20Tondo%20with%20meals,%20it%20actually%20worked%20nicely%20serving%20it%20with%20a%20slice%20of%20this%20magnificent%20cake.%20Filled%20with%20ricotta%20cheese%20and%20pine%20nuts,%20the%20subtle%20cheese%20element%20held%20it%E2%80%99s%20own%20and%20I%20really%20enjoyed%20mixing%20these%20two.%3C/p%3E%3Cp%3EAbout%20this%20cake?%20Shared%20with%20us%20by%20Francis%20but%20from%20Bar%20Tuscher%20in%20a%20palazzo%20in%20Cortona%20run%20by%20Massimo%20and%20Daniela,%20it%20is%20a%20simple%20and%20yet%20simply%20delicious%20dessert.%20Vin%20santo%20wine%20is%20not%20widely%20distributed%20so%20I%20did%20a%20quick%20search%20and%20found%20that%20a%20dry%20sherry%20could%20be%20substituted.%20%20So%20lightly%20scented%20but%20so%20perfect.%20Rich%20without%20being%20heavy%20and%20just%20so%20Italian%20with%20the%20hint%20of%20wine%20and%20scattered%20with%20toasted%20pine%20nuts.%20I%20know%E2%80%A6pine%20nuts%20are%20SO%20pricey%20but%20this%20uses%20only%20a%20small%20amount%20and%20seems%20the%20perfect%20splurge%20if%20you%20have%20the%20mind%20to%20pick%20up%20a%20few.%20I%20would%20substitute%20almonds%20in%20a%20heartbeat%20though%20if%20pine%20nuts%20aren%E2%80%99t%20in%20the%20budget.%3C/p%3E%3Cp%3EMy%20dog%20is%20such%20a%20beggar%20and%20I%20am%20so%20bad;%20she%20usually%20gets%20a%20bite%20of%20everything.%20Not%20this%20time;%20each%20and%20every%20crumb%20was%20mine%20all%20mine!%20I%E2%80%99ve%20included%20the%20recipe%20for%20this%20cake%20but%20this%20is%20such%20a%20lovely%20book,%20I%20do%20urge%20you%20to%20find%20it;%20the%20wines%20too.%20I%20can%20almost%20promise%20they%20will%20transport%20you%20to%20Tuscany%20too.%20Would%20you%20take%20me%20with%20you,%20please?%3C/p%3E%3Cp%3EWine%20Cake%20from%20The%20Tuscan%20Sun%20Cookbook%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Butter%20and%20lightly%20flour%20a%20nonstick%209%20inch%20springform%20pan%20or%2010%20inch%20tube%20pan.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20and%20beat%20the%20butter,%20sugar%20and%20ricotta%20until%20fluffy.%20Beat%20in%20the%20eggs%20one%20at%20a%20time%20and%20then%20incorporate%20the%20vin%20santo.%3C/p%3E%3Cp%3ESift%20the%20flour%20and%20baking%20powder%20into%20a%20small%20bowl,%20then%20slowly%20and%20thoroughly%20beat%20them%20into%20the%20batter.Pour%20into%20the%20prepared%20pan.%3C/p%3E%3Cp%3ESprinkle%20the%20pine%20nuts%20on%20top%20and%20bake%20for%2030%20minutes,%20or%20until%20the%20cake%20is%20firm%20but%20springy%20to%20the%20touch%20and%20a%20promising%20aroma%20fills%20the%20air.%3C/p%3E%3Cp%3ECool%20before%20removing%20the%20cake%20from%20the%20pan.%20Sift%20Confectioner's%20sugar%20over%20the%20top.%3C/p%3E%3Cp%3E2.2%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/wine-cake-from-tuscan-sun-cookbook/%3C/p%3E%3Cp%3EThis%20recipe%20brought%20to%20you%20by%20Creative%20Culinary%20%7C%20A%20Food%20and%20Cocktail%20Blog%20%7C%20Website:%20www.creative-culinary.com%3C/p%3E){kind=link}
