Directions

  1. Dissolve yeast in hot water. Add in potato, honey, salt and bread flour. Allow to sit at least 1 hour to create sponge.
  2. Combine honey, molasses and butter/shortening and add in to sponge. Add in whole wheat flour and wheat germ if you like. Knead till smooth, adding flour as needed. Let rise till double in bulk. Punch down and make into 2 large or possibly 3 small loaves. Let rise. Bake 30-40 min at 375 degrees.
