White Chip Luscious Lemon Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup packed light brown sugar
  • 1 tsp freshly grated lemon peel
  • 1 tsp vanilla2 eggs
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups (12 oz pkg.) white chips
  • 1 cup chopped pecans, (optional)

Directions

  1. Heat the oven to 350 F
  2. Lightly grease cookie sheets
  3. Beat the butter, brown sugar, lemon peel, and vanilla in a large bowl until fluffy.
  4. Add the eggs
  5. Beat well
  6. Stir together the flour, baking soda, and the salt
  7. Add to the butter mixture
  8. Stir in the white chips and the pecans, if desired
  9. Drop by tablespoons onto the prepared cookie sheets
  10. Bake for 8 to 10 minutes or until almost set
  11. Cool slightly
  12. Remove from the cookie sheets to wire racks
  13. Cool completely
