Ingredients
- 2 cups dried white beans cooked in water with 4 bay leaves and 4 cloves of garlic
- or 5 cups canned cannellini beans, drained and rinse
- 4 cups puréed courgette soup
- 4 cups chicken stock or bean cooking liquid
- 2 chicken breasts, boneless, skinless
- 1 green pepper
- 1 yellow pepper
- 1 large onion
- 4 cloves garlic
- 3 ribs celery
- 1 tbs olive oil
- 4oz green chiles - or something hotter
- 1 tsp chili powder
- 2 tsp oregano

%20had%20her%20stroke%20she%20seemed%20to%20become%20a%20braver%20dog.%3C/p%3E%3Cp%3EIt%20was%20rather%20nice.%3C/p%3E%3Cp%3EI%20could%20go%20about%20my%20day%20without%20a%20second%20thought%20to%20where%20she%20was%20and%20did%20I%20remember%20to%20close%20the%20gate%20in%20case%20she%20got%20out%20when%20a%20bell%20went%20off.%3C/p%3E%3Cp%3EShe%20and%20Emma%20(the%20Pyreneen%20mastiff)%20slept%20like%20good%20little%20dogs%20on%20their%20respective%20beds%20most%20of%20the%20day.%3C/p%3E%3Cp%3EA%20week%20ago%20that%20changed.%3C/p%3E%3Cp%3ESedi%20is%20not%20only%20back%20to%20running%20from%20the%20microwave,%20she%20takes%20off%20when%20I%20open%20the%20refrigerator%20and%20even%20acts%20skittish%20when%20I%20open%20the%20pantry%20-%20where%20doggie%20treats%20are%20stored.%3C/p%3E%3Cp%3EInstead%20of%20sleeping%20on%20her%20bed%20she%20now%20sleeps%20on%20the%20doormat%20in%20front%20of%20the%20door.%20%20The%20wet,%20cold,%20dirty%20door%20mat.%3C/p%3E%3Cp%3EAnd%20speaking%20of%20doors....%3C/p%3E%3Cp%3ETo%20all%20of%20you%20dog%20owners%20out%20there%20-%20Do%20your%20dogs%20understand%20how%20doors%20work?%3C/p%3E%3Cp%3EMy%20two%20get%20their%20noses%20right%20up%20tight%20to%20the%20door%20and%20wait%20for%20it%20to%20magically%20become%20open.%3C/p%3E%3Cp%3EThen%20I,%20the%20magician,%20come%20along.%3C/p%3E%3Cp%3EBecause%20the%20door%20opens%20in%20(as%20all%20European%20doors%20do%20-%20how%20else%20could%20one%20secure%20the%20shutters?)%20we%20then%20go%20through%20the%20back-up,%20back-up,%20back-up%20routine%20as%20they%20try,%20unsuccessfully%20to%20force%20their%20way%20through%20the%20tiniest%20crack%20as%20I%20try,%20unsuccessfully,%20to%20force%20the%20door%20open%20against%20their%20noses.%3C/p%3E%3Cp%3EEventually%20the%20door%20is%20opened.%3C/p%3E%3Cp%3EThen%20they%20act%20like%20old,%20lost%20tourists%20getting%20off%20an%20escalator.....they%20come%20to%20a%20dead%20stop.%3C/p%3E%3Cp%3ERight%20in%20the%20middle%20of%20the%20door;%20letting%20hot%20air%20out%20and%20cold%20air%20in.%3C/p%3E%3Cp%3EI%20think%20they%20lost%20what%20few%20wits%20they%20had%20whilst%20in%20the%20mountains.%3C/p%3E%3Cp%3EThey%20do%20remember%20to%20come%20and%20give%20me%20cuddles%20on%20a%20regular%20basis.....%3C/p%3E%3Cp%3ENow%20about%20the%20Olive%20Drab%20Chili.%3C/p%3E%3Cp%3EBack%20in%20July,%20when%20it%20was%20summer,%20I%20did%20a%20post%20about%20freezing%20courgette%20(zucchini).%3C/p%3E%3Cp%3ENow%20I%20have%20to%20think%20of%20ways%20to%20use%20it....%3C/p%3E%3Cp%3EThe%20set-up:%3C/p%3E%3Cp%3EI%20love%20soup%20of%20any%20and%20every%20kind.%3C/p%3E%3Cp%3EMon%20mari%20likes%20soup,%20but%20doesn't%20like%20the%20'broth'%20of%20stock-based%20soup.%20%20He%20eats%20all%20the%20chunks%20and%20ignores%20the%20broth.%3C/p%3E%3Cp%3EI%20wanted%20to%20make%20the%20'White%20Chili'%20I%20was%20seeing%20on%20blogs%20over%20the%20holidays.%3C/p%3E%3Cp%3EThe%20solution:%3C/p%3E%3Cp%3EUse%20the%20courgette%20soup%20I%20had%20frozen%20to%20thicken%20the%20stock.%3C/p%3E%3Cp%3EThe%20verdict:%3C/p%3E%3Cp%3ENutritious%20and%20Delicious!%20%20Definitely%20a%20keeper%20-%20but%20it%20wasn't%20'white'.%3C/p%3E%3Cp%3EWhite%20Chili%20(or%20Olive%20Drab)%3C/p%3E%3Cp%3Egreen%20Tabasco%3C/p%3E%3Cp%3ETo%20cook%20dried%20beans:%20%20Put%20beans%20in%20a%20large%20pot,%20cover%20with%20water%20and%20allow%20to%20soak%20for%20at%20least%205%20hours.%20%20Drain%20and%20cover%20with%20fresh%20water.%20%20Bring%20beans%20to%20a%20boil%20over%20medium%20heat%20and%20simmer%20partially%20covered%20for%2020%20minutes.%20%20Drain%20%20and%20cover%20with%20fresh%20water%20by%202%20inches.%20%20Add%20bay%20leaves,%20whole,%20peeled%20garlic%20and%201%201/2%20tsp%20salt.%20%20Bring%20to%20a%20boil,%20reduce%20heat%20and%20simmer,%20partially%20covered%20until%20beans%20are%20tender,%2060%20-%2090%20minutes.%20%20Drain,%20reserving%20the%20cooking%20liquid;%20discarding%20bay%20leaves%20and%20garlic.%3C/p%3E%3Cp%3EThe%20chili:%20%20Cut%20chicken%20into%20small%20pieces%20and%20poach%20in%20chicken%20stock.%3C/p%3E%3Cp%3EChop%20onion,%20peppers,%20celery.%20%20Mince%20garlic.%20%20Open%20and%20chop%20chiles.%3C/p%3E%3Cp%3EHeat%20oil%20in%20soup%20pot.%20%20Add%20chili%20powder%20and%20saut%C3%A9.%20%20Add%20onion,%20celery%20and%20peppers;%20saut%C3%A9%205%20minutes.%20%20Add%20garlic%20and%20%20saut%C3%A9%205%20minutes%20longer.%20%20Add%20chicken,%20poaching%20liquid,%20pur%C3%A9ed%20courgette,%20oregano,%20cover%20and%20simmer%2020%20minutes.%20%20Add%20green%20chiles%20and%20simmer%2010%20minutes%20longer.%20%20Taste;%20add%20as%20much%20green%20Tabasco%20as%20you%20like.%20%20Serve.%3C/p%3E%3Cp%3ENote:%20%20I%20used%20the%20bean%20cooking%20liquid%20with%202%20tbs%20chicken%20base%20added%20in%20place%20of%20the%20chicken%20stock.%3C/p%3E%3Cp%3EThere%20you%20have%20it:%20Olive%20Drab%20Chili%3C/p%3E){kind=link}
