Ingredients
- 3 Large eggs
- 1 c. salad oil
- 1 c. white sugar
- 1 c. brown sugar
- 1 tbsp. maple flavoring
- 2 c. coarsely shredded zucchini
- 2 1/2 c. flour
- 1/2 c. toasted wheat germ
- 2 teaspoon soda
- 2 teaspoon salt
- 1/2 teaspoon baking pwdr
- 1 c. minced walnuts
- 1/3 c. sesame seeds
Directions
- Beat Large eggs, add in oil, sugars and maple flavoring. Beat till thick and foamy. Stir in zucchini. Combine flour, wheat germ, soda, salt, baking pwdr and walnuts. Stir gently into zucchini mix. Divide into 2 greased and floured 5 x 9 inch loaf pans. Sprinkle sesame seeds proportionately over top. Bake at 350 degrees for 1 hour. Yield: 2 loaves.
- NOTE: Better if stored overnight before eating.
