Wasabi Smashed Red Potatoes Recipe

This is an easy recipe and a different twist on regular mashed potatoes. They make a nice side dish to accompany something Japanese or Asian. The amount of wasabi used is really up to personal taste. I like lots but my wife doesn't; so I went light. I had more wasabi at the table for me. Like they say--happy wife, happy life. I used red potatoes which are lower in starch than russet but any type would work. You may want to vary the amount of milk used depending on the consistency you like in the final product. I served them with fried wasabi green peas to add some crunch.

Directions

  1. Place potatoes in a large pot of salted water. Boil until tender, about 15 mintues. Drain. Reutn potatoes to the pot and smash.
  2. Combine milk and wasabi paste in a bowl to combine. Add milk and butter to potatoes. You may need more or less milk depending on the consistency you want for the final product. Mix until completely combined.
  3. Potatoes are ready for the table
