Vintage Fruitcake

This recipe uses a nice fruity wine to make it a winner!

Ingredients

  • 2 cups candied fruit
  • 1 cup brown sugar
  • 2 cups raisins
  • 1/4 teaspoons nutmeg
  • 1 cup chopped dates
  • 1/4 teaspoon cinnamon
  • 1 chopped walnuts
  • 4 eggs, beaten
  • 1 can pineapple, crushed, drained
  • 2 1/2 cups flour
  • 1 cup blackberry wine
  • 1 teaspoon baking powder
  • 3/4 cup vegetable shortening
  • 1 1/2 teaspoons baking soda

Directions

  1. In a large bowl, mix together candied fruit, raisins, dates, nuts, and pineapple.
  2. Pour wine over fruits and set aside.
  3. Cream shortening, brown sugar, and spices together
  4. until fluffy.
  5. Mix in beaten eggs.
  6. Add flour, baking powder, and baking soda, and
  7. beat well.
  8. Add fruit mixture, and mix well.
  9. Pour batter into 2 large loaf pans or 6 minature pans.
  10. Bake at 300 degrees for 1 1/2 to 2 hours.
  11. Cool and wrap with foil. Store for at least 1 week before cutting
  12. for best flavor.
  13. They are tasty and make really nice gifts, esp. the little ones!
