"Vergetarian" Diane

Our friend Diane has coined the term "vergetarian" in describing herself as someone on the verge of becoming a vegetarian. We thought it clever enough that we decided to name this dish after her...well, the "vergetarian" part anyway.

Goes Well With: brown rice, fresh cooked veggies, cucumber side

Ingredients

  • 1 pkg. (8 0z.) cubed seitan, cut into slices
  • 2 tsp. lemon pepper
  • 1/4 cup vegetable broth
  • 2 Tbsp. Earth Balance or other vegetable "margarine"
  • 6 tsp. lemon juice
  • 1 Tbsp. Vegan Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 Tbsp. fresh minced parsley

Directions

  1. Sprinkle each slice of seitan with lemon pepper.
  2. Heat Earth Balance in medium skillet and cook seitan for
  3. 3 to 4 minutes; flip slices and continue to cook for another 3 minutes.
  4. Remove to a platter and keep warm.
  5. Add broth, lemon juice, Worcestershire sauce and mustard to skillet.
  6. Cook, stirring until heated through. Pour over seitan and garnish with parsley.
