Slow cooked "green" pulled pork loin .... Delicious!

Directions

  1. Dry rub 2 - 3 lbs. of well trimmed pork loin cut into large chunks ... let sit several hours.
  2. Chop 1 large onion, 4 garlic cloves crushed, zest and juice of 1 lime and 1 orange, 1 cup chicken stock and 1/2 jar verde salsa. Mix with pork in an oven and stove top safe pan.
  3. Roast in 350 oven for 2-3 hours until shred tender.
  4. Remove pork to plate & shred. With immersion blender, blend sauce til smooth, add pork back in to sauce. Serve with hard or soft shells, with the usual suspects .... my favorite addition, chipotle cream!
  5. I don't know where they came up with the calorie count, but there is no way this is a "fatty" dish!
