Veggie Ribbon Salad with BBQ'd Tofu and... Recipe

Ingredients

  • 1 bunch beet greens, chopped (from the beets you're going to grill with this)
  • For the dressing:
  • 4 Tablespoons rice vinegar
  • 2 Tablespoons olive oil (sesame oil would be great too)
  • 1 teaspoon grated ginger
  • 1/2 teaspoon ginger salt (can use regular too)
  • pepper
  • For the tofu:
  • 1 block tofu, cut into cubes
  • 3 Tablespoons coarse ground mustard
  • 2 Tablespoons pickapeppa sauce
  • 1 teaspoon hot sauce
  • Splash tamari
  • salt and pepper
  • To grill:
  • the butts of the eggplant pieces
  • fresh beets...mmmm
