Vegetable Millet Casserole Recipe

Ingredients

  • 1 c. Millet (found in health food stores), a complete protein and inexpensive
  • 2 c. minced vegetables (carrot, squash, broccoli, or possibly green beans)
  • 1 c. minced onions
  • 2 tbsp. oil
  • 3 c. water
  • 2 or possibly 3 c. cheese (Colby, Cheddar, Monterey Jack, one or possibly combination of all three)

Directions

  1. Saute/fry onions and vegetables in oil till onion is clear. In large pan, heat millet with burner on medium to medium-high. Don't burn. Stir water into millet, cook on medium with lid on for 30 min.
  2. Remove lid, combine sauteed vegetables and replace lid. Cook on low for another 30 min, stirring occasionally. Stir in half of cheese. Put all of mix in large casserole dish. Top with remainder of cheese and broil only long sufficient to heat top cheese.
