,%20strawberry%20shortcake%20(double%20duh),%20strawberry%20cake%20(slightly%20interesting)%20and%20of%20course,%20strawberry%20lemonade%20(makes%20me%20reminiscent%20of%20my%20weekend%20with%20the%20boys%20and%20Kirsten%20:))%3C/p%3E%3Cp%3EI%20suppose,%20for%20that%20matter,%20strawberries%20are%20versatile%20for%20most%20any%20type%20of%20cocktail%20creation.%20Cocktails%20seem%20to%20be%20the%20only%20slightly%20versatile%20thing%20to%20do%20with%20a%20strawberry.%20Anyone%20have%20anything%20to%20say%20about%20that?%3C/p%3E%3Cp%3EAnyway,%20so%20I%20settled%20upon%20strawberry%20pie.%20Not%20strawberry%20rhubarb%20pie;%20strawberry%20pie.%20As%20'harumph'%20as%20I%20was%20about%20not%20being%20very%20'creative',%20the%20pie%20was%20really%20good%20and%20a%20huge%20hit%20at%20home%20and%20in%20the%20office.%20It%20was%20also%20quite%20easy,%20using%20the%20same%20crust%20recipe%20as%20the%20hand%20pies,%20the%20strawberries%20played%20center%20stage%20in%20this%20summery%20dessert.%20Score%20one%20for%20me...%20and%20perhaps%20strawberry%20as%20well!%3C/p%3E%3Cp%3Ekind%20of%20loose%20but%20very%20good.%20Ooh!%20that's%20what...%20nevermind.%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EWhisk%20together%20the%20flours%20and%20salt.%20Using%20a%20pastry%20cutter,%20cut%20in%20the%201/2%20cup%20Earth%20Balance%20to%20create%20a%20crumbly%20texture.%20Add%20the%20tablespoons%20of%20ice%20water%20two%20at%20a%20time,%20mixing%20lightly%20in%20between.%3C/p%3E%3Cp%3EAs%20your%20dough%20forms,%20combine%20well%20and%20form%20into%20a%20ball.%20Wrap%20that%20ball%20in%20plastic%20wrap%20or%20put%20it%20in%20a%20sealed%20container%20and%20refrigerate%20for%20at%20least%201/2%20hour,%20but%20an%20hour%20is%20better.%3C/p%3E%3Cp%3EWhile%20your%20dough%20is%20chillin',%20put%20your%20strawberries%20in%20a%20bowl%20and%20add%20the%20lemon%20juice,%20sugar%20and%20corn%20starch.%20Mix%20well%20to%20combine%20and%20make%20sure%20everything%20is%20evenly%20distributed.%3C/p%3E%3Cp%3EPrepare%20your%20pie%20dish%20by%20spraying%20lightly%20with%20cooking%20oil%20or%20coating%20with%20a%20little%20Earth%20Balance.%3C/p%3E%3Cp%3EWhen%20your%20dough%20is%20done,%20preheat%20the%20oven%20to%20375%20then%20take%20your%20dough%20from%20the%20refrigerator,%20cut%20it%20in%20half%20and%20set%20one%20half%20aside.%3C/p%3E%3Cp%3EWith%20your%20first%20half,%20use%20a%20rolling%20pin%20and%20pastry%20cloth,%20if%20you%20have%20one,%20and%20roll%20dough%20into%20a%20lovely%20circle%20about%201/4%20inch%20thick.%20(this%20will%20be%20your%20bottom%20crust)%3C/p%3E%3Cp%3EPlace%20the%20rolled%20out%20dough%20into%20the%20pie%20dish,%20pressing%20it%20into%20the%20corners%20and%20pinching%20the%20edges%20so%20it's%20even%20all%20the%20way%20around.%20Note:%20you%20may%20need%20to%20cut%20the%20dough%20away%20in%20some%20areas%20if%20there%20is%20an%20abundance.%3C/p%3E%3Cp%3ECover%20the%20pie%20crust%20with%20a%20little%20tin%20foil%20and%20bake%20in%20the%20oven%20for%205%20to%208%20minutes%20then%20remove.%3C/p%3E%3Cp%3EWhile%20pie%20crust%20is%20cooking,%20roll%20out%20the%20other%20half%20of%20the%20dough%20just%20as%20you%20did%20the%20first%20(this%20will%20be%20your%20top%20crust%20or,%20your%20lid).%3C/p%3E%3Cp%3EWhen%20bottom%20crust%20is%20done,%20remove%20from%20the%20oven%20and%20spoon%20in%20your%20filling.%20Top%20pie%20filling%20with%20the%20rolled%20out%20top%20crust.%20Pinch%20crusts%20together%20as%20best%20you%20can,%20making%20sure%20it%20is%20even%20all%20the%20way%20around.%3C/p%3E%3Cp%3ECut%20cute%20little%20slits%20or%20fancy%20designs%20in%20the%20top%20of%20the%20crust%20to%20provide%20a%20place%20for%20steam%20to%20escape%20:)%3C/p%3E%3Cp%3EPut%20back%20in%20oven%20for%20about%2020%20to%2025%20minutes.%3C/p%3E%3Cp%3EWhen%20done,%20remove%20and%20let%20cool.%20Note:%20this%20will%20help%20the%20filling%20to%20set%20as%20well.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EWell,%20growing%20up%20in%20our%20household,%20we%20were%20allowed%20to%20eat%20pie%20for%20breakfast...%20as%20long%20as%20it%20had%20a%20piece%20of%20cheese%20on%20top.%20It's%20a%20miracle%20I%20don't%20weigh%20a%20million%20pounds%20with%20that%20philosophy!%3C/p%3E%3Cp%3EOtherwise,%20this%20pie%20is%20great%20sliced%20on%20a%20plate%20by%20itself%20or%20served%20up%20with%20some%20soy%20delicious%20ice%20cream.%3C/p%3E%3Cp%3EIt's%20sure%20to%20be%20a%20winner%20so%20enjoy!%3C/p%3E%3Cp%3EStrawberry%3C/p%3E){kind=link}
