- Need:
- 1 1/2 cups warm water
- 1 Tablespoon sugar
- 2 teaspoons salt
- 1 pkg yeast (2 1/4 teaspoons)
- 4 1/2 cups unbleached flour
- 10 cups water
- 2/3 cups baking soda
- Chunky sea salt

%20knead%20the%20dough%20until%20combined%20then%20turn%20out%20onto%20a%20lightly%20floured%20surface%20and%20continue%20to%20knead%20until%20you%20have%20a%20smooth,%20elastic%20ball%20of%20dough.%20About%203-5%20minutes.%3C/p%3E%3Cp%3ENote:%20in%20this%20particular%20instance%20I%20did%20not%20use%20my%20Kitchenaid,%20I%20just%20used%20my%20hands...%20something%20organic%20about%20getting%20back%20to%20basics.%3C/p%3E%3Cp%3EReturn%20your%20ball%20of%20dough%20to%20the%20bowl%20and%20drizzle%20with%20extra%20virgin%20olive%20oil.%20Cover%20your%20bowl%20and%20place%20it%20in%20a%20warm%20area%20to%20rise.%20Dough%20should%20rise%20to%20about%20double%20it's%20size;%20about%20an%20hour.%3C/p%3E%3Cp%3EWhen%20dough%20is%20done%20rising,%20bing%20water%20and%20baking%20soda%20to%20a%20boil%20in%20a%20large%20pot%20on%20the%20stove.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450%20and%20line%20a%20baking%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3EGet%20your%20dough%20out%20and%20divide%20it%20into%208%20pieces.%3C/p%3E%3Cp%3EWith%20your%20first%20piece,%20roll%20it%20out%20into%20a%2024%20inch%20long%20rope%20making%20sure%20the%20thickness%20is%20even%20throughout%20the%20rope.%3C/p%3E%3Cp%3EHolding%20ends,%20let%20dough%20rope%20fall%20into%20a%20'U'%20shape,%20then%20twist,%20lay%20the%20twist%20down%20and%20press%20ends%20into%20the%20'U'.%20Repeat%20with%20other%20dough%20balls.%3C/p%3E%3Cp%3EPlace%20dough%20pretzels%20in%20boiling%20water,%20cooking%20for%2030%20seconds%20then%20remove%20and%20place%20on%20baking%20sheet.%3C/p%3E%3Cp%3ESprinkle%20tops%20with%20chunky%20sea%20salt%20and%20bake%20in%20oven%20for%2010-12%20minutes%20until%20golden%20brown%20on%20top.%3C/p%3E%3Cp%3ENote:%20I%20did%20four%20pretzels%20at%20a%20time%20because%20that%20is%20what%20my%20pot%20of%20water%20and%20baking%20sheet%20would%20hold.%3C/p%3E%3Cp%3EWhen%20done,%20remove%20from%20oven%20to%20cool.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EServe%20these%20little%20darlings%20warm%20with%20spicy%20brown%20mustard%20and%20a%20beer.%3C/p%3E%3Cp%3EThe%20pretzels%20have%20an%20amazing%20flavor%20and%20chewy%20texture.%20Fun%20for%20kids%20and%20adults%20of%20all%20ages%20and%20super%20easy%20to%20make.%20Store%20leftovers%20in%20a%20paper%20bag...%20if%20you%20put%20them%20in%20plastic%20the%20salt%20will%20'sweat',%20disappear%20and%20leave%20you%20with%20a%20soggy%20topped%20pretzel.%3C/p%3E%3Cp%3EYou%20could%20easily%20freeze%20these%20by%20letting%20them%20cool%20completely,%20then%20put%20in%20freezer%20on%20a%20tray%20to%20freeze.%20Once%20completely%20frozen,%20put%20in%20freezer%20bags%20and%20return%20to%20freezer.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EYeast%3C/p%3E){kind=link}
