Ingredients

  • 1 veal roast (3-4 lbs.)
  • 1/3 c. oil
  • 1 teaspoon paprika
  • 2 cloves garlic, pressed
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 2 tbsp. vermouth

Directions

  1. Combine ingredients in large baking dish. Roll the roast in the marinade. Let stand at room temperature 1 hour. Baste roast. Preheat oven to 300 degrees. Roast right in pan 2 hrs. Place on serving platter. Remove strings. Reserve pan juices for the sauce. Carve roast and serve with Bacon and Mushroom Sauce.
