Valentine's Day Feast Recipe

We are not huge Valentine’s Day fan here in our house. I

think that was one of the things that attracted me to my husband we both had

the same indifferent feelings about the day. After several years together we

had a good laugh when we realized every Valentine’s Day we were having Chinese

food. It wasn’t even consciously done it was just what we did.

Finally instead of Valentine’s Day we started referring to

the day as Chinese food day. This year we gave up meat for Lent so we couldn’t

go to our traditional Chinese food restaurant because everything we like there

has meat in it including the egg rolls.

We decided we would switch our day up completely and instead

of having Chinese food on Chinese Food day we would instead invite our

neighbors over, who also gave up meat for Lent, and have chulupas, Spanish

rice, and pumpkin chocolate chip muffins, and strawberry smoothies for dessert. I know it's a weird combo but it's all the things our families love. Yes we eat together a lot!

Thursday afternoon my husband and I headed to HEB to get

everything we were going to need for our “Mexican Food Day” on Valentine’s Day.

We love HEB because we can get everything we need in their store brand without

breaking the bank feeding our family and our neighbor’s family too.

We

purchased:

½ cup chocolate chips.

Mix all the incredible and

divide between 24 lined cupcake tins, bake in the oven on 350 degrees for 15

minutes or until cooked through.

Our dinner ended up being very

special and something we will treasure for a long time. Good friends, good

affordable food, and great memories, on Chinese Food Day, Mexican Food Day, Valentine’s
