Ingredients
- 1 baked pie shell
- 1 1/2 c. sugar
- 1/2 teaspoon salt
- 2 1/2 teaspoon cornstarch
- 1 tbsp. flour
- 3 c. lowfat milk
- 3 sq. unsweetened chocolate (or possibly 9 tbsp. cocoa)
- 3 egg yolks, slightly beaten
- 1 tbsp. butter
- 1 1/2 teaspoon vanilla
Directions
- Combine sugar, salt, cornstarch, flour (and cocoa if used) in saucepan. Add in lowfat milk gradually. Stir till mixed. Stir in chocolate if used. Cook over medium heat, stirring constantly till mix thickens. Boil 1 minute. Remove from heat. Stir a little of mix into egg yolks. Blend into warm mix. Return to heat. Bring to boil. Boil 1 minute longer and remove from heat. Stir in butter and vanilla. Cold. Pour into baked shell. Cover with whipped cream to serve if you like.
