Ingredients
- 2 c. heavy cream
- 2 c. lowfat milk
- 2 tbsp. cornstarch
- 2 Large eggs, well beaten
- 1/2 c. sugar
- 1 vanilla bean
- 2 tbsp. lowfat milk (for cornstarch)
Directions
- Scald cream and lowfat milk in top of double boiler. Mix cornstarch and lowfat milk and add in to mix. Add in vanilla bean and cook, stirring till slightly thick. Add in small amount of mix to beaten Large eggs (use an egg beater). Stir this into mix and cook till thick. Add in sugar and beat till smooth. Cold. Remove vanilla bean, scrape out pulp and add in to mix. Freeze in 2 qt ice cream maker.
