%20and%20should%20not%20be%20confused%20with%20taro%20or%20purple%20sweet%20potatoes.%20Although%20there%20are%20lots%20of%20purple%20sweet%20potatoes%20in%20Malaysia,%20I%20have%20never%20encountered%20purple%20yam%20there.%20Fortunately,%20frozen%20fresh%20grated%20ube%20can%20be%20found%20in%20some%20Asian%20markets%20here%20in%20the%20Midwest.%3C/p%3E%3Cp%3EIn%20the%20Philippines,%20ube%20desserts%20are%20very%20popular.%20Ube%20is%20used%20in%20ice%20cream,%20cakes,%20cookies,%20and%20even%20jam.%20I%20have%20tasted%20taro%20ice%20cream%20but%20not%20Ube%20Ice%20Cream%20and%20was%20very%20interested%20to%20give%20it%20a%20try.%20Most%20recipes%20found%20on-line%20use%20cooked%20mashed%20ube.%20Grated%20fresh%20(uncooked)%20ube%20presents%20a%20different%20challenge.%20It%20holds%20water%20when%20thawed%20and%20it%20needs%20to%20be%20cooked%20to%20prevent%20the%20ice%20cream%20from%20becoming%20gritty.%3C/p%3E%3Cp%3EI%20found%20this%20source%20on-line%20that%20says%20that%20the%20thawed%20grated%20ube%20should%20be%20squeezed%20to%20remove%20as%20much%20water%20as%20possible.%20This%20makes%20sense%20but%20squeezing%20the%20grated%20ube%20is%20messy%20business%20and%20so%20I%20decided%20to%20skip%20this%20step.%20Cooking%20the%20ube%20is%20a%20must%20cause%20you%20definitely%20do%20not%20want%20to%20eat%20raw%20yam.%20I%20steamed%20the%20ube%20for%2015%20minutes,%20mashed%20it%20with%20a%20fork,%20and%20it%20was%20good%20to%20go.%3C/p%3E%3Cp%3EIn%20my%20first%20try,%20the%20ice%20cream%20turned%20out%20quite%20creamy%20and%20delicious%20but%20it%20was%20still%20a%20little%20gritty%20with%20flecks%20of%20purple%20yam%20in%20it.%20My%20solution%20was%20to%20blend%20the%20ice%20cream%20mixture%20and%20strain%20it%20before%20freezing.%20In%20my%20second%20attempt,%20I%20wanted%20it%20to%20be%20a%20little%20different%20and%20so%20I%20added%20some%20cream%20corn%20to%20the%20mixture.%20I%20was%20disappointed%20that%20the%20combination%20was%20okay%20but%20not%20fantastic.%20In%20my%20third%20attempt,%20I%20left%20it%20plain.%20This%20Ube%20Ice%20Cream%20was%20very%20creamy%20and%20smooth%20with%20an%20almost%20floral%20hint.%20It%20was%20totally%20delicious%20and%20I%20am%20very%20satisfied!%20Love%20the%20color%20too%20and%20it%20is%20all%20natural.%20Only%204%20ingredients%20%E2%80%93%20ube,%20sugar,%20milk,%20and%20cream.%20No%20eggs.%3C/p%3E%3Cp%3EUbe%20Ice%20Cream%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ESteam%20grated%20ube%20for%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20and%20mash%20with%20a%20fork.%3C/p%3E%3Cp%3ECombine%20whole%20milk%20and%20sugar%20in%20a%20medium%20sized%20saucepan%20over%20medium%20heat.%20Do%20not%20cover%20but%20stir%20until%20sugar%20dissolves%20and%20milk%20comes%20to%20a%20bare%20simmer.%20Turn%20off%20heat.%3C/p%3E%3Cp%3EMix%20in%20steamed%20ube%20and%20heavy%20whipping%20cream.%3C/p%3E%3Cp%3EUsing%20a%20stand%20or%20stick%20blender,%20puree%20the%20mixture%20until%20smooth.%3C/p%3E%3Cp%3EThen%20pour%20the%20mixture%20through%20a%20sieve%20to%20remove%20remaining%20lumps%20of%20ube.%3C/p%3E%3Cp%3EDiscard%20solids.%3C/p%3E%3Cp%3ECover%20and%20chill%20in%20refrigerator%20for%20at%20least%202%20hours.%3C/p%3E%3Cp%3EPlace%20frozen%20bowl%20on%20base%20of%20ice%20cream%20maker%20and%20turn%20it%20on.%20Pour%20chilled%20ube%20mixture%20into%20the%20frozen%20bowl.%20Churn%20according%20to%20manufacturer%E2%80%99s%20instructions%20for%2010%20to%2015%20minutes.%3C/p%3E%3Cp%3ETransfer%20ice%20cream%20to%20a%20container%20with%20lid.%20Cover%20and%20freeze%20for%20a%20couple%20of%20hours%20before%20serving.%3C/p%3E%3Cp%3ENotes%3C/p%3E%3Cp%3E2.5%3C/p%3E%3Cp%3Ehttp://www.rotinrice.com/2014/09/ube-ice-cream/%3C/p%3E%3Cp%3ECopyright%20%C2%A9%202010-2014%20Roti%20n%20Rice.%20All%20rights%20reserved.%3C/p%3E%3Cp%3EEnjoy%E2%80%A6..and%20have%20a%20wonderful%20day!%3C/p%3E){kind=link}
