Two Rooms Hummous

A thick spread made from mashed chickpeas in the style of the restaurant Two Rooms. Can be served as an accompaniment with fish or used as a dip.

Ingredients

  • 1kg chick peas (uncooked)
  • 1/2tspn bicarbonate of soda
  • 300gms sesame seed paste
  • 50gms garlic
  • 200ml olive oil
  • 5gms cumin powder
  • 1gm chili powder
  • 30gms salt
  • 1L purified water
  • 300ml lemon juice

Directions

  1. Boil Chickpeas---
  2. Soak chickpeas for 24 hours before use
  3. Cook chickpeas in plenty of water with the soda until very soft
  4. Drain Water
  5. Mix All Ingredients---
  6. Combine sesame seed paste, garlic, olive oil, chili powder, salt, purified water, and lemon juice
  7. Add chickpeas to chickpeas and puree
