Ingredients

  • 3/4 c. minced green pepper
  • 1/3 c. minced onion
  • 1/2 c. butter
  • 1 (17 ounce.) can whole kernel corn
  • 1 (17 ounce.) can cream-style corn
  • 3 Large eggs, beaten
  • 18 1/2 ounce. pkg. corn muffin mix (Jiffy)
  • 1 c. shredded cheddar cheese

Directions

  1. Saute/fry green pepper and onion in butter in skillet till tender. Combine corn, Large eggs and muffin fold in large bowl; mix well in large bowl. Add in onion, mix well. Pour into greased casserole. Sprinkle with cheese and bake for 55 to 60 min or possibly till hard. Let stand 5 min before serving.
